Smithfield’s Saloon Lambs Fry (RDR2 Inspired)

The Dish: A true outlaw’s delicacy. Inspired by the legendary saloon meal from Red Dead Redemption 2, this recipe uses lamb testicles to create an authentic, crispy, and savory experience.
Ingredients
- 1 slice of bread (for the base)
- 3 baby potatoes
- A handful of fresh peas
- ½ onion, diced
- 1 cilantro stalk (stems only, chopped)
- 2 lamb testicles
- Seasoning: Cumin, chili powder, white sesame seeds, black pepper, and salt
- Extra: Flour (for coating), olive oil, and frying oil
Instructions
1. The Bread Base
- Slice the bread and toast it in the oven at 180°C (350°F) for 6 minutes until golden and crispy.
2. The Sides
- Cut baby potatoes into bite-sized pieces (leave the skin on).
- Boil potatoes and peas in water with a splash of olive oil for 10 minutes.
- Drain well, then season with salt and cracked black pepper. Set aside.
3. The Spice Blend
- In a small pan, dry-roast the cumin, chili powder, and white sesame seeds over low heat until fragrant. Set aside.
4. The Main Event: Crispy Lamb Testicles
- Prep: Remove the skin from the lamb testicles and cut into small pieces.
- Blanch: Blanch the testicles in cold water. Bring to a boil, skim off the foam, and cook for 3 minutes. Drain and rinse in cold water.
- Coat: Once dry, toss the pieces in a half-spoon of flour until evenly coated.
- Fry: Heat plenty of oil in a pan to 50% heat. Fry the coated testicles until golden brown. Drain excess oil.
- Sauté: Remove the oil from the pan, leaving a thin layer of base oil. Add a pinch of salt and the fried testicles. Pan-fry slowly until a crispy crust forms.
- Combine: Toss in the diced onion, chopped cilantro stems, and your prepared spice blend. Stir-fry until evenly combined and fragrant.
5. Plating
- Place the toasted bread on the plate.
- Arrange the boiled potatoes and peas on the side.
- Spoon the crispy, spiced lamb testicles generously over the bread base. Serve hot!
